Crispy roasted potatoes

As I’ve shared before, I like to plan our weeknight dinners ahead of time to help our week go a bit more smoothly. And the smoother the better!

If I know what I’m cooking each day, I can move foods from the freezer to the fridge the day before so they can thaw.

Planning ahead also allows me to pick up everything I need for the week in one grocery trip, rather than running to the store several times a week.

Everything I cook on weeknights is simple and easy (but also tasty–and hopefully healthy).  As I shared before, I also tend to rotate several of the same meals on a weekly or bi-weekly basis, changing up the side dishes to add a little variety.

It’s important to me to cook from scratch as much as possible, but when I do use processed foods, I always check the ingredient list* to make sure they don’t contain anything I don’t recognize.  I also try to avoid hydrogenated oils, trans-fats, artificial sweeteners, soy, vegetable oils (other than olive oil), and chemical-laden preservatives.  Ideally, though, I strive to use as many foods as possible that don’t have an ingredient list at all!

Bistro Chicken
Organic pasta
Roasted zucchini, carrots, and onion (chop veg, toss with olive oil and salt and pepper, place on a roasting pan and bake at 400 F for 25 to 30 minutes)
Salad greens with shredded carrots and raw sunflower seeds & olive oil


Blackened Shrimp Tacos
Organic tortilla chips
Salad greens with shredded carrots and raw sunflower seeds


Baked “Fried” Chicken
Organic jasmine rice
Organic broccoli florets
Grilled naan with olive oil

My mom is coming over for dinner, and I know she loves soup, plus I like to keep things simple when we invite people over, so soup’s on the menu!

Chicken Vegetable Soup with Rice
Alexandra’s peasant bread

Trader Joe’s lemon bars for dessert (because my mom has a sweet tooth!)


Burgers (with grass-fed beef)
Roasted potatoes
Broccoli florets
