Easy Microwave Chocolate-Covered Strawberries Recipe

Decadent chocolate-covered strawberries are my favorite dessert for Valentine’s Day–or any day, for that matter. To me, they’re the epitome of romance!  Sweet strawberries, hand-dipped in rich chocolate seem so fancy–yet they’re amazingly easy to make, because the good news is, they’re made in the microwave!

This easy microwave method is the easiest and best way I have found to make chocolate covered strawberries.  And, the wonderful thing about chocolate covered strawberries is that they’re actually good for you, which is a great reason to make them a daily thing!

Feel free to use your favorite type of chocolate for this recipe, whether that’s milk chocolate, dark chocolate, or semi-sweet chocolate. But, for best results, use a high-quality chocolate for dipping your strawberries — it really makes a difference!  This Belgian chocolate is the best chocolate I’ve found; this one is also excellent; and these chocolate chips are dairy-free!

When you’re at the grocery store shopping for fresh strawberries for this recipe, look for large, ripe fresh fruits that have stems attached.  Of course, even if you can’t find the most beautiful, perfect strawberries, they’ll still taste wonderful once they’re coated with rich, delicious chocolate!

This wonderful chocolate dessert recipe is perfect for Valentine’s Day, Mother’s Day, a baby shower brunch, wedding shower, or any special occasion–and I hope you love it as much as I do!

Easy Microwave Chocolate Covered Strawberries Recipe

Ingredients:

1 lb. large fresh ripe strawberries with stems (about 20)

1 cup milk, dark, or semi-sweet chocolate (either chocolate chips or chopped from a chocolate bar)

toothpicks

optional:  1/2 cup white chocolate chips for decorative white chocolate drizzle

Directions:

1. Wash the strawberries and dry thoroughly on paper towel.

2. Place the chocolate in a large glass bowl or large Pyrex measuring container and microwave at half power for 1 minute; stir and heat again at half power for 30 seconds; stir again.  If necessary, microwave again at half power for another 30 seconds and stir until chocolate is smooth. 

Stovetop option:  if you’d rather not use the microwave, place the chocolate in a double boiler or large heat-safe bowl and set the bowl over a saucepan containing a couple inches of water. Bring the water to a simmer over medium heat. As the chocolate melts, lower temperature and stir chocolate until smooth.

3. Line a baking sheet with parchment paper, waxed paper, or aluminum foil.  If desired, place a sturdy toothpick or wood skewer in the stem end of each strawberry to help with dipping. 

4. Holding each strawberry by the toothpick (or just hold on to the stem if you don’t want to use toothpicks), dip the strawberry in the chocolate, then lift and twist slightly, letting any excess chocolate fall back into the bowl.

5. Set the dipped strawberry on the lined baking sheet. Repeat with the rest of the strawberries, arranging in a single layer.

6. Place strawberries in the refrigerator on the baking sheet until the chocolate sets–which should take at least 30 minutes, but it’s a good idea to let them chill for a longer period of time. After removing the dipped strawberries from the fridge, keep them in a cool place until ready to serve.  For best results, serve within a couple of hours.

How to drizzle chocolate covered strawberries

If you want to get really fancy, you can add a white chocolate drizzle over the top of each strawberry. 

To decorate your chocolate covered strawberries, after the first layer of chocolate sets, melt 1/2 cup white chocolate chips as instructed above in Step 2. 

Pour the melted white chocolate into a Ziploc bag and cut off a bit of one corner, then drizzle over the set dark chocolate with a zig-zag motion. 

Or, for a less-controlled but simpler way, dip the tines of a fork into the white chocolate and drizzle away!  Place the baking sheet of drizzled strawberries in the refrigerator and cool again until the white chocolate sets — at least 30 minutes.

How long do chocolate covered strawberries last in the fridge? 

You can store whole dipped strawberries in an airtight container in the refrigerator for a couple of days.  Chocolate covered strawberries can also be frozen, but the strawberries may lose some of their firmness in the process, so I don’t recommend freezing them.

For giving, place each dipped strawberry in a small paper liner and arrange in a single layer in a pretty gift box or tin.
