Friday Favorites (plus a recipe for Paleo Pancakes)

This week was filled with many of my favorite things: time with loved ones, trying out new recipes, reading, writing, and gardening (finally!).

A few things I’m loving lately:

1.  Our new cedar planters.  After weeks of cold, rainy (and snowy) weather, we had a welcomed visitor:  the sun!  I’ve been storing my plants in the garage, just waiting for a chance to get them into the dirt.  Once the sun made an appearance Dave and I ran out and filled our new Gronomics cedar planters with vegetables and herbs.  It will be so nice to see our own fresh vegetables growing, and even nicer to be able to eat them later this summer!

2.  Sunflower Seed Bread.  I love having Lydia’s Sunflower Seed Bread on hand for a quick breakfast or lunch.  It’s made with raw organic sunflower seeds and vegetables.  I’ll admit, the first time I tried it I wasn’t wild about the taste and crispy texture, but I’ve grown to love it!  I usually top mine with sunflower seed butter and a sprinkle of stevia powder for a healthy, protein-filled meal.

3.  My new essential oils box.  I had no idea when I ordered my new doTERRA essential oils box that it would hold so many oils!  That said, I don’t think I’ll have any trouble filling it!

4.  Lucky Ladies.  When I saw these “Lucky Ladies” pasture-raised eggs at Natural Grocers this week, I just had to buy them!  I love the packaging, and honestly, I’ve found that when I buy products from animals that are treated humanely, not only do they taste better they make me feel warm and fuzzy (or feathery) inside.

5.  Paleo Pancakes.  I’ve been loving these delicious Paleo Pancakes for breakfast lately.  They’re quick and easy to put together in one bowl, and they cook up beautifully.  Give them a try, even if you’re not following a Paleo eating plan.  {They’d be perfect for breakfast this weekend!}  Recipe below.

Paleo Pancakes Recipe with Almond Flour and Almond Butter

Paleo Pancakes

Makes 6 four-inch pancakes


1 cup almond flour
1/4 cup almond butter
3 eggs, beaten
I Tbsp. raw honey
1 tsp. cinnamon
1 Tbsp. coconut oil or ghee, for cooking


1. In a medium bowl, lightly beat eggs with a fork until well-blended.  Add remaining ingredients and stir until fairly smooth.

2. Heat coconut oil or ghee in a pan over medium heat.  When oil has melted and is lightly sizzling, add about 1/4 cup batter to pan for each pancake.  If necessary, smooth the batter out with a spatula to about 4 inches in size.

3. Cook 3-4 minutes until pancakes are golden brown on the bottom.  Flip and cook an additional 2-3 minutes, until cooked through.

4. Remove to a plate and serve with your choice of toppings.
