Summer is upon us, and I don’t know about you, but I’m feeling a little bit giddy! We live in an area that has looooong winters, so when balmy weather finally arrives, I just can’t get enough of it. One thing I’m sure of–when it’s beautiful outside, the last thing I want to do is hang out in a hot kitchen dreaming up supper ideas!
Since summertime is all about keeping things easy and casual, our suppers this time of year have to be quick to prepare, (reasonably) healthy, family-friendly, and preferably portable–so we can carry them out to the patio.

1 Chicken Caesar Salad with Homemade Croutons. (Pictured above.) I serve this delicious salad at least once a week throughout the summer. We just can’t get enough of the simple combination of crusty homemade croutons, shredded parmesan, grilled chicken, and fresh greens. And the special dressing is the secret to making this Caesar salad better than any other!
Nothing says summer like chicken salad sandwiches! This showstopper creamy chicken salad gets a fancy touch with the addition of slivered almonds. And you can adapt it by adding different nuts, apples, grapes, etc.
Fire up the grill (or indoor grill — this is what we use) and you’ll have this flavorful (and healthy) meal ready in no time!
